When Pooja Bavishi made the decision to start her own ice cream company, Malai, she had a clear, personal vision. "I created Malai as I was looking at ways to honour the food that I was raised with as a child Indian American in a popular mainstream way," she says.
"Everyone is a victim of an ice cream memory of their youth, and it typically involves visiting your local ice cream shop for a delicious treat to share with your loved ones," Pooja says. This nostalgia-infused fusion has taken Malai to a stand in local markets and food halls to grocery store freezers and pop-up carts all over New York City, and a bustling flagship shop located in Brooklyn offering the ability to deliver both locally and nationally.
