When Pooja Bavishi made the decision to start her ice cream business, Malai, she had the clarity of her own personal goals. "I launched Malai in order to celebrate the flavors I grew up with as a first generation Indian American in a popular and mainstream fashion," she says.

"Everyone has an ice cream memory from their childhood, and the majority of them are related to visiting an ice cream shop in the neighborhood store for a treat and a cup of ice cream with beloved family members," Pooja says. That infusion of nostalgia is what has brought Malai from being a stand-in in markets and local food halls to freezers in grocery stores as well as pop-up stores around New York City, and a bustling flagship location located in Brooklyn offering local and national delivery.
